Anyone For Secret Cookie Cupcakes?

It's day two and i'm still keen on this whole blog thing. I'm quite surprised really, I thought after sleeping on it i'd come to the realization that this was a pretty dumb idea, but here I am.
Anyway
So I thought I would share an AMAZING little cupcake recipe myself and my boyfriend discovered the other day.
Oreo Stuffed Cupcakes!
Vanilla cupcakes with a secret Oreo cookie
hidden inside! intrigued?
They are super easy to make and something every keen cupcake maker should try out
Ingredients & Stuff
150g Self raising flour
150g Plain caster sugar
150g Margarine
2 Large eggs
2 Teaspoons vanilla essence
And enough packets of oreo cookies to have a few to munch on while baking aswell as enough to hide in your cupcakes (and some for decorating if you want!)
Just start off as you would making a batch of normal everyday cupcakes. Blend the flour, sugar, margarine and eggs together in a big bowl aswell as a couple of drops of vanilla essence (this is optional.. but helps on the yumminess front)
Once your ingredients are all blended together and you have a thick mixture line your baking tray with large cupcake cases (they need to be pretty big to fit an oreo inside!)
Half fill the cases with the mixture and smooth down with the back of a teaspoon to make a little 'bed' for your cookie to sit on. Then just pop your cookies on top and completely cover them with the rest of the mixture!
Place in a pre heated oven at 180° and bake for 20 mins
And then ... Tadah!
Finish off with some vanilla flavored butter cream icing and some crushed cookies for decoration and you're good to go.
They look awesome when you take a bite. And don't taste too bad either.
Dammit.. This post has made me hungry.
